What's Cooking - November

One of my current 30 by 30 goals, as well as a few upcoming goals on my 101 in 1001 4.0 that will be starting in March, is to make more things that I've pinned rather than just pin it & forget it.  So to keep me accountable, as well as share some delicious new recipes with you, I'm going to bring back What's Cooking.

I was originally going to make it "What's Cooking & A Weigh In" so I could also keep track of how my goal of working out & losing weight is going.  However I'm going to be honest here, I haven't stepped on a scale in over a month & the workout I stopped doing the workout I was basing the timing of these posts on & started something else.

So instead, you just get food.  Which let's be honest, that's what you care more about anyway!

This was probably my favorite.  It was easy first of all.  And second of all, I love meatballs.  Sometimes I'll just make up a batch of meatballs & sauce to eat as my lunches for the week.

I started out the month on a spaghetti squash kick.  This was also really good!  I probably would have kept the theme going for the month, & actually intended to, but going to MN for a week killed any big meal prep I did for the remainder of the month.

I had actually originally seen these on Facebook & then went in search of the recipe because I had to have them.  While I was home for Thanksgiving we had an appetizer night one night & this was my contribution.  I love all things jalapeno popper so these were a hit for me.  They were super easy to make too.

A pesto cheese ball was my contribution to Thanksgiving.  I honestly didn't eat a whole lot of it because I was so distracted by everything else but my brother loved it!

Because of the holidays & traveling, Pinterest cooking took a backseat this month.  I can only imagine that unless I do a lot of new baking & what not while I'm in MN for Christmas December will be the same.
